Scottish Recipes - Smoked Salmon Tart

This is a dish which combines to use two commonly available ingredients and combines them into a tasty fish dish. Try to use wild salmon if available as this will enhance the taste and texture.

Smoked Salmon Tart

Ingredients:
8oz flour
pinch of salt
2oz lard
2oz butter
2oz scottish smoked cheddar cheese(unsmoked will do)
fresh water (to mix)

Tart Filling

3eggs
5fl oz double cream
salt and pepper
8oz smoked salmon
1 tablespoon finely chopped chives

Method:
Set oven to 350F and grease an 8inch flan dish. Sift the flour and salt into a bowl, then rub in the lard and butter until the mixture resembles fine breadcrumbs.

Add the cheese and just enough water to mix to a dough. Cover this with clingfilm and chill for approx 30 minutes in a refrigerator. After this is complete, roll out the dough onto a lightly floured surface. Use this to line the flan dish and bake until a light crisp brown colour.

Break the eggs into a bowl, adding the cream and seasoning and whisk together. Spread the salmon (which you can flake or shop into pieces) over the cooled base of the tart, sprinkle with the chives and pour in the egg mixture. Bake this for approx 20-25 minutes until the mixture si set and golden brown in colour.

This dish should serve 4-6 people
