Scotch Woodcock Recipe
This is a recipe which uses Anchovy Fillets. Many people would assume from the name of this dish that it is in someway connected with wild game or some other meaty dish but it is an incredibly simple fish dish. Perhaps it is a dish which you could introduce youngsters to cooking by allowing them to try out (CLEARLY YOU WOULD SUPERVISE AT ALL TIMES)
Scotch woodcock (an easy fish recipe)
Ingredients:
2 tablespoons milk
Salt & Pepper to season
Anchovy Fillets
4 slices buttered toast OR fried bread
1 oz butter
4 eggs
Method:
I have assumed you have just made the toast or fried bread. Keep these warm.
Melt the butter into a pan and stir in the eggs and milk, season whilst cooking on a low heat. Once the eggs have thickened, spoon onto the toast and top with the anchovy fillets and serve as a light supper dish.
