Welsh Cake Recipe
Welsh cake provides all the usual dilemmas associated with cooking or more accurately baking. Is it a bit sweet? Perhaps too dry? or the pointless arguements over what is the "true" fruit that it shoudl be made with currant or sultana. This is one recipe. I am, sure you will find many.
Welsh Cake Recipe
Ingredients:
3 oz currants
3 oz white self-raising flour
1 teaspoon of mixed spices
1 large egg
5 oz Wholemeal self-raising flour
3 oz caster sugar
4 oz butter
Method:
Mix both flours with the mixed spices. Then rub the butter and the sugar together into the flour mixture. Then mix in the currants and egg until it's a light dough. Roll the dough half an inch thick, then cut with a 2" diameter round cutter. Fry four minutes each side on an oiled griddle over a slow heat.
Some will, before serving, sprinkle with white sugar, but that is a matter of taste. Best eaten straight away.
