Welsh Broth Recipe
This is a recipe for a hearty soup filled with the flavours of root vegetables and sweet welsh lamb.It is especially good as a winter time soup or even for those needing a "good feed".
Welsh Broth Soup
Ingredients:
2lb trimmed lamb cutlets
1/2lb onions
3 medium leeks
1/2 lb parsnips
1/2 lb carrots
1/2 lb swede turnip
2lb potatoes
Seasoning (salt and pepper)
Chopped fresh parsley or chives
Method:
Remove as much fat as possible from the cutlets and chop into small cubes then boil the meat gently in water for 1 hour. Skim off any excess fat.
Peel and chop the vegetables and add to the lamb. Season to taste. Then cover and simmer until the vegetables are tender.
Serve with hot rolls or bread and garnish the soup with the parsley or chives.
