These grilled vegetables really add a nice flavor to panini sandwiches or any side dish.

Recipe Ingredients:
- 2 eggplants
- 3 onions
- 5 green peppers
- 3 large zucchini
- 3 potatoes
- 4 tomatoes
- 2 garlic cloves
- 1 bunch finely chopped parsley
- 1 bunch finely chopped fresh coriander
- 4 tbsp vinegar
- Olive oil
- salt and pepper to taste
Method:
In a deep pan combine chopped vegetables, onions, potatoes and zucchini. Cook them for 15 min and strain the water.
Fry the egg plants with garlic. Add chopped tomatoes, salt and pepper to taste. Place the boiled vegetables as a layer in the pan.
Add chopped coriander, chopped parsley and paprika. Stir well.
Add olive oil, stir and bake the dish for 1/2 hour at 180 C.
