Vegetable Soup with pork
Tonjiru is Japanese pork and vegetable miso soup. This is a very popular hearty soup for any occasion.

Recipe Ingredients:
- 1 cup sliced pork
- 1/2 cup burdock root
- 1/2 cup chopped carrot
- 1/4 cup leek
- 2 potatoes
- 3 cups Dashi soup stock
- 4 tbsp Miso paste (bean paste)
Method:
Shave burdock into short strips and soak in water. Slice leek diagonally. Cut carrot and potato into small chunks.
Cut pork slices into bite-sized lengths.
Saute pork, potato, carrot, burdock in a deep pan. Add dashi soup stock stop in the pan and simmer over medium heat.
When vegetables are soft, add miso and leek and simmer for one minute. Stop the heat and serve.
