Valencian Rice
While the rice dishes are certainly made throughout Spain, the paella and other aromatic rice dishes originated in Valencia. Try this delicious rice recipe from Valencia!

Recipe Ingredients:
- 1 cup Basmathi/long grain rice
- 1 finely chopped onion
- 2 cups vegetable stock
- 1 cup orange juice
- 2 tbsp orange rind grated
- 2 tbsp olive oil
- 2 tbsp butter
Method:
Soak the rice in cold water for 1 hour. Drain the water and keep aside.
In a deep pan combine oil and butter. Once the butter is melted, add onions to the pan and fry till golden brown. Add the soaked rice. Fry for 2 min, add water and cook on low heat.
Add the stock, orange rind, orange juice, cover with a lid and boil.
Simmer on low heat until the rice is cooked properly.
Serve hot.
