Tomato Pesto
This recipe for tomato pesto is made with basil and tomatoes.

Recipe Ingredients:
- 2 cups fresh basil, finely shredded
- 1 tomato, peeled and chopped
- 3 garlic cloves, crushed
- 5 tablespoons olive oil
- Vinegar
- 1/4 cup parsley, chopped
- salt and freshly ground pepper
Method:
Place the basil, salt, pepper, garlic and tomato and mash with a machine.
Slowly add the olive oil and stir the puree. Serve with pasta or pannini.
