Spicy Pork Curry
This spicy blend contains savory eggplant, onion powder, curry powder, cumin, and other ingredients. This spicy recipe is very good with rice.

Recipe Ingredients:
- 1/2 lb pork tenderloin, trimmed
- 1 tsp vegetable oil
- 1 tbsp minced garlic (3 cloves)
- 3 tbsp jungle Curry Paste
- 2 cup defatted chicken stock
- 1/2 lb Chinese eggplant, coarsely chopped
- 1/2 lb long beans trimmed cut into 1 inch pieces
- 2 tbsp fish sauce
- 1/4 cup thinly sliced fresh krachai
- 1 tsp grated lime zest
- 1/2 cup chopped fresh basil
Method:
Cut the pork into pieces and mix with soy sauce and oil. Add corn starch and mix it with pork.
Mix soy sauce with vinegar, sherry, sugar and salt. Add the spices if desired.
In a pan heat some oil and fry the meat, stirring it for 10 minutes.
Add soy sauce mixture to the meat and cook it until meat is done well.
Add the chilli paste and cook well.
Garnish with chopped coriander. Serve hot with rice.
