Traditional Pickled Beef Recipe
This is a straightforward recipe for traditional pickled beef. The pickling gives the beef a full flavour and of course the marinading helps to make the meat much more tender.
Pickled Beef
Ingredients:
2lb stewing steak (whole if possible-not pre cubed)
6 cloves
3 fl oz olive oil
3 fl oz red wine vinegar
12 peppercorns (black)
12 oz onions
2 bayleaves
2 oz butter
3 fl oz beef stock
Thyme & Parsley
Seasoning (Salt & Pepper)
Method:
Prepare the marinade by mixing the oil, vinegar, cloves and peppercorns and a sprig of thyme and parsley. Slice the meat into approx 8 - 10 slices. Place the meat in a bowl along with the sliced onions and bayleaves. Then pour the marinade over. Cover the dish and leave overnight to let the flavours seep into the meat.
The following day, drain the meat completely and pat dry. Heat the butter in a frying pan and fry on both sides according to taste. Set aside and keep warm.
Add the stock to the juices which remain in the frying pan also adding a little of the marinade (2-4 tablespoons). Boil this mixture in the pan and reduce to a thick sauce. Season if required then pour over the beef.
This dish should serve 6-8 people and traditionally would be served with a potato dish of your choice.
