Salmon and Basil Recipe

Salmon Steaks with basil sauce Recipe

Ingredients

  • 25 g (1 oz) margarine
  • 2.5 cm (1 inch) piece root ginger, finely grated
  • 4 x 175 g (6 oz) fresh salmon steaks
  • 1 glass white wine, made up to 250 ml (1/2 pint) with fish stock
  • 1 bayleaf
  • 1 x 20 g (3/4 oz) packet fresh basil, roughly chopped
  • 3 x 15 ml spoons (3 tbsps) Elmlea Whipping Cream


Method

Melt margarine in heavy based saucepan and lightly saute ginger and salmon steaks for 3-4 minutes. Pour over wine and fish stock, add bayleaf and poach gently for 5-6 minutes until cooked. Remove fish onto serving dish and keep warm. Boil the cooking liquor until reduced slightly, add the basil and Elmlea and heat for 1-2 minutes. Season the sauce and serve poured over the salmon steaks.
