rice With Meat and Fava Beans
Fresh broad beans are very popular in Lebanon. The trick is to turn the pot upside-down so that the meat and beans are on top of the rice.

Recipe Ingredients:
- 1/2 cup butter
- 1 pound lamb
- 1/2 cup chopped onions
- Salt and pepper (to taste)
- 1/2 tbsp ground allspice
- 19 ounce Fava beans, drained
- 1 cup rice
- water to boil
- 4 tbsp coriander, fresh chopped
Method:
Melt the butter in a pan on medium heat. When the butter begins to turn brown add onions, allspice, salt and pepper. Fry until the onions turn golden brown.
Add the meat and brown it. Add drained fava beans, rice and the water, stir well. Cover and cook for 30 minutes or until rice is tender and water has evaporated.
Place in serving dish and garnish with the coriander. Serve with plain yogurt and pita bread.
