Rice Cake Soup
Japanese rice cake is called mochi, and this is a great recipe for mochi soup.

Recipe Ingredients:
- 5 cups water
- 5 pieces rice cake, purchased
- 4 pieces chicken thigh
- 1/2 cup mushrooms
- 1/2 cup leek
- 1/2 cup carrot
- cabbage 1/2 cup
- 1 tbsp sugar
- 1 tbsp Sake
- 2 tbsp soy sauce
Method:
Slice carrots, mushrooms and leeks and keep aside. Chop chicken thigh into small pieces.
In a frying pot combine water, sake, soya sauce and sugar and let it to boil. Boil for 5 min.
Add chicken pieces to the pot and boil for another 5 min. Add the carrots and mushrooms and leeks. On low heat cook until chicken and veggies cooked properly.
Add the grilled rice cakes to the soup. Let it boil for 2-3 min and remove from the heat.
Serve with soy sauce.
