Traditional Scotland Teatime Treats Ideas
Raisin Muffins Recipe
This is a recipe for raisin muffins. Muffins are of course thought of as an American (USA) treat but they have been baked in Scotland for many years. This recipe uses a variety of ingredients and can be served dry or with some cinammon butter (recipe below main recipe)
Ingredients:
- 125g (4oz)margarine
- 175 g (6 oz) soft brown sugar
- 1 egg
- 225g (8oz) raisins
- 275 g (10 oz) plain flour, sieved with
- lx 5ml spoon (1 tsp) baking powder,
- and lx 2.5ml spoon (1/2 tsp) salt
Method:
Cream margarine and sugar until light and fluffy and beat in egg. Then Cook raisins in 425 ml (/34 pint) water for 15 minutes. Drain raisins, reserving lOOml (4fl.oz) of liquid. Add liquid to creamed mixture and stir in dry ingredients and raisins until just moistened.
Spoon into greased muffin tins and bake in preheated oven 190~C, 375 F, Gas No.5 for 15-20 minutes.

Cinammon Butter:
- 125 g (4 oz) Butter (Salted)
- 175 g (6 oz) brown sugar
- lx 5 ml spoon (1 tsp) cinnamon
Mix together all ingredients and serve with warm muffins
