Rabbit with Tomatoes
This is a mouth-watering recipe from Tuscany where cuisine is an art.

Recipe Ingredients:
- 1 cup rabbit meat
- 1/2 cup sliced onions
- 1 glass white wine
- 1 tbsp tomato paste
- 2 tbsp pepper
- Salt
- Bay leaves
- 2 tbsp parsley
- 2 tbsp tomatoes
- olive oil
Method:
In a deep bowl combine the rabbit with flour and oil. Add the salt and pepper and mix well and keep in the fridge for 4-5 hours for marination.
Once marinated fry the rabbit in olive oil till golden brown. Take the pieces out, add onions and fry till golden brown. Add wine, tomato paste, salt and pepper to taste and mix them well. Add spices and the bay leaves.
Add the rabbit to the pan and simmer on low heat for 1 hour. Add the tomatoes chopped into halves. Simmer until everything is cooked properly.
Garnish with chopped parsley and coriander and serve with hot rice or pita.
