Traditional Scottish Queens Tart Cake Recipe
This is a recipe for a jam and sultana tart. I have seen this recipe referred to under several names such as Queen Mary's Tart, Royal Tart or simply Queen's tart.
Queens Tart Cake
Ingredients:
8 oz puff pastry
2 tablespoons jam (raspberry is traditional but most flavours will be fine)
2oz sugar
2 oz butter
2oz chopped mixed peel
1 tablespoon sultanas
2 beten eggs
Method:
Pre heat oven to 425F. Roll out the pastry on a floured surface and line a 7 inch (greased) flan dish. Spread the jam over the pastry. Melt the sugar and butter in a saucepan over a gentle heat. Add the mixed peel and sultanas. Remove from the heat then add the beaten eggs. Pour this mixture into the pastry case. Bake for 20-25 minutes until the filling is set.
The cake can be served hot (cooled slightly-obviously) or cold.
