Fish Potatoes Recipe
This is a very simple fish dish which will use up left over fish. It combines left over fish with another basic ingredient (potatoes) to provide a hearty, filling snack.
Fishie tatties
Ingredients:
4 large baking potatoes
1 teaspoon anchovy essence
2 oz butter
2 oz Scottish Cheddar cheese
Left over cooked fish (removing as many bones as possible)
Method:
Bake the potatoes in their jackets until lovely and crisp on the outside but soft and fluffy on the inside. Cut each one in half, scoop out the contents and put the contents into a bowl. Add the butter, anchovy essence and cooked fish to the potatoes. Mix thoroughly and replace in the potato jackets. Sprinkle the tops of both halves with cheddar cheese and place under a hot grill until browned on top and heated through.
This dish should serve 4
