Traditional Scottish Pork Hot Pot Recipe
This is a recipe for a rich casserole dish which blends the flavours of rich pork meat with apple, whisky and mustard. It is certainly the kind of recipe which will give you some ideas on "what to do with pork".
Rich Pork Hotpot
Ingredients:
1 lb pork fillet (cubed)
1 large onion Diced)
8 oz mushrooms (either sliced or diced)
2 tablespoons flour
5 fl oz Beef stock
5 fl oz whisky (blended NOT Malt)
4 fl oz apple juice
1 Tablespoon Scottish Mustard (French is an alternative)
Seasoning (salt/pepper)
Method:
Melt some butter in a pan and brown the pork meat. Add the mushrooms and onions, then cook for 3-4 minutes. Stir in the flour and cook (stirring regualrly) for a further 2 minutes. Remove from heat.
Add the stock, whisky, apple juice and mustard. Return to heat and bring to boil. Then cover and simmer for 35-45 minutes. Season if required.
This dish should serve 4 people and traditionally would be served with a potato dish of your choice but is perhaps best with creamy mash.
