Plum Pudding (Duff) Recipe
This is a recipe for traditional plum pudding (sometimes knwon as plum duff). It is a strange recipe, in that no plums are actually used.
Plum Duff (pudding) Recipe
Ingredients:
4oz self raising flour
4oz currants
4 oz raisins
1 cup milk
4 tablespoons rum
juice and rind of a lemon
4 oz breadcrumbs
4oz dark brwon sugar
4oz shredded suet
1 cored and peeled large apple (chopped)
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 Eggs
Method:
Butter a 2 pint pudding basin. Mix all the dry ingredients together in a large bowl. Then add the lemon, rum and eggs. Then slowly add enough milk and stir to produce a dropping consistency.
Place this mixture into the pudding basin and cover with greaseproof paper or a pudding cloth. Steam for 3 hours. Serve warm with cream or custard.
