Onion-Champagne Soup
This easy onion soup is made with onions, champagne, spices and breat croutons.

Recipe Ingredients:
- 3 onions
- 6 tbsp butter
- 3 cups hot water
- 2 bay leaves
- Salt to taste
- 2 tbsp pepper
- 2 tbsp Cayenne pepper
- 1/2 cup dry Champagne
- Nutmeg
- 3 egg yolks
- 1 cup Port wine
- 10 slices fried bread
Method:
Fry the onions on butter in a deep pan until they turn golden brown. Add water and let it boil. Add pepper, salt, nutmeg and cayenne and bay leaf. Mix well and let it boil on low heat for 25 mins.
Add champagne and boil it for 5 more min. Add the chopped cheese and egg white to the soup. Stir well with a fork.
Add port wine to the soup. Boil it for 5 mins. Take out from the heat and chill.
Toast the bread. Serve the soup with toasted bread.
