Oatmeal Gingerbread Recipe
This is a recipe for oatmeal Gingerbread which is a soft cake/bun.
Ingredients:
6 oz plain flour
2 oz oatmeal
2 oz soft brown sugar
2 tablespoons black treacle
2 oz butter
1 teaspoon mixed spices
1 beaten egg
1 teaspoon ground ginger
1 teaspoon bicarbonate of soda
3 tablespoons milk
Method:
Pre heat oven to 350F. Line a 7 inch square baking tin with a sheet of buttered greasproof paper. Place the butter, treacle and sugar together in a saucepan and heat gently. Once the fat has melted remove from heat.
Sieve the flour and bicarbonate of soda into a bowl then add the oatmeal and the spices. Pour the melted mixture over this, stir once or twice then add the beaten egg and the milk. This time stir until the mixture is well blended together. Pour this mixture into the tin and bake in the oven for approx. 45 minutes.
Allow to cool in the tin slightly (about 10-15 minutes) then turn out onto a wire rack to cool completely.
