Mixed Nut Pie Vegetarian Menu Meal Ideas
This is a recipe for a vegetarian nut feast. If you are having visitors or indeed you are vegetarian yourself then it is a relatively simple and tasty meal idea.

Ingredients:
- 175 g (6 oz) shortcrust pastry
- 3 eggs, size3
- 1 X 15ml spoon (1 tbsp) milk
- 175g (6oz) demerara sugar<.li>
- 150 ml Maple Syrup
- 50g (2 oz) margarine
- 2.5ml spoon (½ tsp) vanilla essence
- 150g (5 oz) mixed nuts, halved, eg walnuts, pecans, hazelnuts, etc.
- 25g (1 oz) glace cherries, halved
Method:
Make pastry and roll out to line a 20-22cm (8-9 inch) tranche tin.
Filling: beat eggs and milk together. Boil sugar and syrup together for 3 minutes. Pour onto beaten eggs and stir in margarine and vanilla flavouring. Use half the nuts and cherries to cover base of pastry case and spoon syrup mixture over. Cover with remaining nuts. Bake at 220~C, 425~F, Gas No.7 for 1O minutes. Reduce heat to 160~C, 325~F
Gas No.3 for a further 45 minutes until set. Serve warm or cold.
