Mushrooms and Rabbit

Rabbit is known for its delicate tender taste and mushrooms add more flavour to this recipe. This is a perfect main course for your special occassions.

Recipe Ingredients:

  • 1.5 kg rabbit
  • 1 1/2 cup mushrooms cut in small pieces
  • 1 cup olive oil
  • Salt to taste
  • 4 tbsp pepper
  • 3 tbsp olive oil for sauce
  • 2 tbsp flour
  • Nutmeg
  • 1/2 glass fresh milk
  • 1 cup cheese, finely grated


Method:

In a deep bowl place the rabbit with mushrooms, oil, salt and pepper. Mix well and keep in the fridge for 4-5 hours for marination.

Once marinated bake the rabbit for 1 hour at 180 C till cooked properly.

In a pan combine olive oil and flour. Mix well and add the milk. Boil the sauce, adding cheese and nutmeg. Stir often to prevent from forming clumps.

Pour the sauce over the rabbit and serve hot.
