Bread and Butter Pudding Recipe
This is a recipe for a very rich bread and butter pudding. For some reason (I don't know why) it is called moonshine pudding in some parts of the U.K.
Moonshine Pudding
Ingredients:
3/4pint milk
1/4 pint single cream
3 beaten eggs
2 oz butter
6 thin slices of bread (white, crusts removed)
2oz sultanas
2oz caster sugar
grated rind of half a lemon
ground nutmeg
Method:
Preheat the oven to 350F. Grease a shallow ovenproof dish with some of the butter, then spread the rest over the bread. Cut the bread into strips and arrange (overlapping and in layers-read next sentence) in the dish with the buttered side upwards.
Sprinkle each layer with sultanas and some sugar then build the next doing the same. Finish with a layer of buttered bread with no sultanas or sugar.
Heat the milk and cream to just below boiling and stir in the eggs. Then add the lemon rind. Pour this mixture over the bread and leave to soak for approx. 20 minutes. Sprinkle with nutmeg according to taste. Bake the pudding for 35-40 minutes until the top is golden and crispy and the custard is set.
