Marmalade and Ginger Slice Recipe
This would be a typical tea time treat in Scotland often served with a warm drink such as tea or coffee. The recipe which uses marmalade and ginger is a reasonably simple one if you are used to cooking and baking.
Marmalade and Ginger Slice
Ingredients:
8oz flour
4oz butter
1 tsp baking powder
8oz golden syrup
8oz orange marmalade (others flavours may do according to taste but traditionally it is smooth orange)
1 beaten egg
1 tsp ground ginger
1 egg
Method:
Set oven to 350F. Grease an 8 inch baking tin (square). Melt the syrup and butter in a pan over a gentle heat taking care not to burn the mixture. Stir in the marmalade then leave to cool.
Sift all the dry ingredients into a bowl leaving a "well" in the centre. Into this well, pour the syrup mixture and the beaten egg. Beat the mixture until thoroughly mixed.
Pour into the tin and bake for approx 45 minutes until it is firm and golden in colour. The cake should then be ready to cool on a wire tray and to cut up into slices
