Marmalade Ring Cake Recipe
This is a recipe for marmalade Ring Cake which is a lovely tea time treat in Scotland. Traditionally it would use orange marmalade but as with all recipes you are free to experiment.
Ingredients:
- 125g (4oz) margarine
- 75g (3oz) softbrown sugar
- 2 x 15m1 spoons (2 tbsps) marmalade
- 2 eggs, size 3
- 175g (6oz) self-raising wholemeal flour
- Grated rind of 14 oranges and 14 lemons
- 1 x5ml spoon (1 tsp) mixed spice
For Icing:
- 125g (4oz) icing sugar
- lx 15ml spoon (1 tbsp) lemon juice
Method:
Cream together the margarine, sugar and marmalade. Then add the eggs and remaining cake ingredients and heat for 2-3 minutes. Spoon into greased 20cm (8") ring cake mould and bake in preheated oven 160~C, 325~F, Gas No.3 for 45-50 minutes. Cool on wire tray.
Beat together the icing sugar and lemon juice until smooth and pour over cake.
Decorate with strips of lemon or orange rind if wished.
