Marinated Kipper Fillets Recipe
This is a recipe which uses kippers. True kippers are smoked or "kippered" herrings. The process is quite a simple one whereby the fish are gutted, split open and smoked flat in a special hut or shed.
Ingredients for Marinated Kippers
4 kipper fillets
1 small onion (finely sliced)
4 tablespoons vegetable oil
1 level teaspoon caster sugar
3 tablespoons white wine vinegar
Bay Leaf
seasoning (salt & pepper)
Method:
Remove the skin from the kippers and place in a shallow dish. Spread the sliced onion evenly over the fish and place the bay leaf on top.
In order to make the marinade: mix the oil, sugar and vinegar together and season lightly. Pour/spoon the marinade over the kippers and leave overnight.
The dish should be served cold along with toast or slices of bread. However, some people prefer it warmed slightly and this should be done in a microwave for as short a period of time as possible.
