Lentil Soup
This easy-to-make lentil soup is very filling thanks to eggs, spices, and onions. It has a distinctive Middle Eastern spicy taste with a hint of folk cuisine.

Recipe Ingredients:
- 2 cups red lentils
- 2 onions
- 10 cups meat stock
- 3 tbsp butter
- Flour
- Egg yolks
- 1 cup milk
- Salt
- 2 tbsp black pepper
- Oil - 2 tbsp
Method:
In a deep pan combine water, meat stock and washed lentils. Cook the lentils in stock for 40 – 45 min until the lentils are cooked and begin to peel.
Drain the stock with the sieve to separate the soup from lentils. Set both components aside.
Melt butter in a pan and fry onions until they turn golden brown. Add flour to the onions and fry briefly until the flour becomes light brown.
Add flour and onion mix to the lentil stock. Simmer on low heat. Add salt and pepper to taste.
Add egg yolks and milk. Mix thoroughly with a fork to form threads.
Serve hot with bread croutons or soya & chili sauce.
