Lamb with Green Beans
This is a delicious lamb recipe from Greece, a slow cooked lamb and green beans stew flavored with parsley and onions. You can serve it with rice or pita bread.

Recipe Ingredients:
- 1 kg lamb, cubed
- 1 kg green beans, chopped
- 1/2 cup olive oil
- 1/2 kg finely chopped onions
- 1 tbsp parsley, finely chopped
- 50 ml vegetable stock
- Salt and pepper to taste
Method:
Fry onions in a pan till they turn golden brown. Reduce the heat.
Add meat. Fry till lamb is tender. Add salt and pepper to taste.
Add the vegetable stock to the pan and simmer the meat in the stock until the meat is fully cooked.
Add green beans and chopped parsley. Simmer on low heat for 5 min and turn the heat off when the water is fully absorbed.
Serve hot with rice and coriander.
