Kimchi
Korean Kimchi is a light and easy to prepare side dish. Once you make it, you won't have to bother making salads for the whole week! Kimchi goes really well with steamed rice, pasta, or as a side dish with meat or poultry.

Recipe Ingredients:
- 4-5 whole Chinese (Korean) cabbages
- 1 Japanese (Korean) Radish
- 1 carrot
- 1 spring onion
- 1 tbsp chopped ginger
- 1 tsp dried and chopped Korean Red Chili
Method:
Wash the cabbages and drain the water. Chop them in fine pieces. Add salt and pepper and mix well. Keep the cabbage aside to marinate.
Squeeze the water out from the cabbages. Add the chopped onions, chopped ginger root, chopped garlic and red pepper to the cabbage and mix well.
Keep in a fridge for 5-6 hours and serve chilled.
