Irish Coddle
A hearty Irish dish, Irish Coddle is faily easy to make. It's a classic comfort food for a cold winter day!

Recipe Ingredients:
- Water
- 8 slices bacon
- 8 large pork sausages
- 1/2 kg sliced potatoes
- Pepper and salt to taste
- 5 tbsp chopped parsley
Recipe Method:
Bring the water to the boil and drop in the bacon and sausages cut into large chunks. Cook for 5 minutes, drain and reserve the water.
Place the bacon and sausages in a large saucepan, add the onions, potatoes, salt,pepper and half the parsley. Add enough of the reserved liquid to cover the ingredients.
Cover with a lid and simmer gently for about 1 1/2 hours until the liquid has reduced and everything is cooked thoroughly.
Serve in a hot bowl.
