Iced tomato Soup
A summer favourite, iced tomato soup is light on calories and easy to make. You can spice it up with soy sauce or garlic bread on the side.

Recipe Ingredients:
- 1 chopped onion
- 2 garlic cloves
- 2 lbs minced tomatoes
- 2 tbsp black olives
- 3 tbsp red wine
- 1 tbsp sugar
- 1 tbsp olive oil
- chopped basil leaves
- Paprika to taste
- Chopped parsley
- Salt and fresh black pepper according to taste
Recipe Method:
In a hot skillet saute the onion until clear. Add tomatoes and cook until tender for 10 minutes.
Now add minced garlic, sugar, paprika, salt and pepper. Cook for 3-4 minutes.
Add wine and a little water. Simmer for 10 minutes.
Serve garnished with basil and parsley.
