Hot Cucumber Soup
Cucumber soup is an easy refreshing summer soup. It can be served hot or cold, with fresh bread or garlic breadsticks on the side.

Recipe Ingredients:
- 1 large English cucumber
- 1 onion
- 2 tbsp parsley
- 1/2 tbsp mint
- 2 tbsp lemon juice
- Gelatin
- Salt to taste
- 2 tsp black pepper
Recipe Method:
Combine add the cucumber, grated onion, parsley and lemon juice in a plastic container and mix them well. Set aside.
In a small cup add warm water to gelatin. Add the dissolved gelatin to the cucumber and onion mix. Add water, season with pepper and salt.
Store in fridge for at least one hour and serve chilled.
