Traditional Highland Bake Recipe
This is quite a simple dish of baked oatmeal, vegetables and bacon, which is topped with pork sausages. If I am honest I have no idea why it is called Highland Bake but is certainly a traditional Scottish recipe.
Highland Bake
Ingredients:
1 lb pork sausages
8 oz back bacon
1 oz lard(for frying)
4oz chopped onions
4 oz (blanched to remove skin) then chopped tomatoes
2 oz breadcrumbs
1 oz medium oatmeal
1 egg
2 tablespoons Milk
Seasoning
Method:
Preheat oven to 350F. Chop bacon into small pieces and fry in the lard over a low heat along with the onions. Add the chopped tomatoes and cook for a further 2-3 minutes. Remove the mixture from the pan into a bowl.
Add the oatmeal and breadcrumbs to the mixture and season. Then beat the egg and milk into the mixture and mix thoroughly.
Spoon the mixture into a shallow, ovenproof dish and place the sausages on top. (sometimes sausagemeat is used to give more of a layer effect)
Bake for approx 30 minutes until the sausages are cooked through. This dish should serve 4 people and traditionally would be served with a potato dish of your choice.
