Traditional baked Herrings in Tomatoe Sauce Fish Recipe
This is a recipe which uses baked Herrings. These are a Scottish Fish and are sometimes known as the "Silver of the Sea" due to their distinctive colouring. Loch Fyne Herrings are regarded as the best but any freshly caught Herrings will suffice.
Ingredients
1/2 tin of chopped tomatoes (or fresh if available)
Salt & Pepper
6 medium sized herrings
1/2 oz butter
1 small Onion
2 rashers of bacon
1 teaspoon anchovy essence
2 tablespoons breadcrumbs
Method
Pre heat oven to 375F. Melt the butter in a pan and gently fry the onion(finely chopped) until soft. Add the diced bacon and cook for 2 minutes. Pour in the tomatoes, cover and simmer for about 15 minutes. Season this mixture with the salt and pepper to suit personal preference.
Spread the anchovy esence on the herrings and place them into a shallow ovenproof dish. Cover the fish with the tomato sauce and sprinkle over the top of this with breadcrumbs.
Bake this for 15-20 minutes until golden brown. You should serve this with a potato dish (most commonly mashed)
