Ham and Cheese lattice pie recipe
Although this recipe may sound as if it uses cooked Ham it actually uses Bacon which in Scotland is often referred to as ham especially at Breakfast time. You can of course use cooked ham if it is to your taste. as pies are, this Lattice Pie is a relatively light version but should still make a wholesome and filling meal
Ingredients
- 175 g (6 oz) shortcrust pastry
- 1 small onion, peeled and finely chopped
- 125 g (4 oz) ham, diced (and grilled with fat cut off if using bacon)
- 125g (4 oz) gruyere or Cheddar cheese, grated
- 2 eggs, size 3
- 150 ml (1/4 pint) milk and Elmlea Single, mixed
- 1 x 5 ml spoon (1 tsp) Dijon mustard Salt and black pepper
Method
Make pastry (or simply use bought) and roll out to line a 18cm (7 inch) flan ring or dish. Reserve pastry trimmings. Place onion, ham and cheese in flan base. Whisk together eggs, milk and Elmlea, mustard and seasoning and pour over filling.
Roll out remaining pastry and cut into long narrow strips. Dampen ends and make a lattice pattern over filling. Bake in preheated oven 190°C, 375°F, Gas No. S for 30-40 minutes.
