Grilled Lettuce with Walnuts
This light salad is an easy way to combine vegetables and protein in one dish, with perhaps some whole grain bread on the side, plus some cool sparkling water or a light wine. A great summer meal!

Recipe Ingredients:
- 1 head of iceberg lettuce, chopped
- 2 tbsp feta cheese
- 3 tbsp balsamic vinaigrette
- 3 tbsp olive oil
- 1 tbsp dried dill
- 4 tbsp shelled chopped walnuts
Recipe Method:
In a shallow pan grill the lettuce for 4 min. Take out and blot the oil with kitchen paper.
Arrange the lettuce on a plate and season with crumbled feta cheese, chopped walnuts, dried dill and vinaigrette dressing.
