Traditional Harvest Pudding Recipe
This is a recipe for a Fruit Steamed Baked Pudding. Based on a recipe for bread and butter pudding it adds the fruits of an English autumn harvest.
Fruit Harvest Ingredients
6-8 slices buttered bread (white is best)
1lb cooking apples
2oz shredded suet
3oz soft brown sugar
2oz raisins
2 eggs
1/2 pint milk
grated lemon rind
Method
Place some of the buttered bread on the bottom of a pie dish (2 slices). Core, peel and slice the cooking apples. Mix the apples, suet, sugar, raisins and lemon rind together. Fill the pie dish with half the ingredients, place a layer of bread on top, then the rest of the fruit ingredients. Cover with another layer of bread, butter side up.
Beat the eggs and milk together then pour over the top of the bread. Cover and leave to stand in a cool place for approx. 1&1/2 to 2 hours. Place in a pre-heated oven at 350F and cook for 1 hour. Traditionally served (whilst warm) with clotted cream but any type of cream may be used.
