Fried Noodles

Noodles is a common recipe in Indonesia, China and Japan. The Fried noodles is a very tasty dish which is very easy to make.

Recipe Ingredients:

  • Soba Noodels - 2 lb
  • Uncooked soba noodles - 6 tbsp
  • Low-sodium Soya Sauce - 2 tbsp
  • Brown sugar - 4 tbsp
  • Crushed red pepper flakes -2 cups
  • Finely chopped onions - 2 tbsp
  • Minced garlic - 2 tbsp
  • Peeled & grated gingerroot - 2 tbsp
  • Snow peas - 1 cup
  • Scallions, chopped - 10
  • Grated lime peel - 1
  • Mung bean sprouts - 1 cup
  • Firm tofu - 6 oz
  • Fresh lime juice
  • Chopped fresh coriander


Method:

In a deep container boil the noodles and drain the water. Add some oil and keep the noodles aside. In a pan add brown sugar , soya sauce and red pepper . On low heat dissolve the sugar. On the sugar is dissolved add chopped onions, chopped garlic and ginger root. Cook for 5 mins. Fry for 10 mins.

Add the scallions (or green onions), snow peas and lime peel to the pan. Cook until the peas become tender and soft. Cook for 5 more mins and add the bean sprouts and tofu. Cook for 10 mins until the beans are cooked properly. Add the noodles and mix gently and fry for 10 more mins. Garnish with coriander and serve.
