Creamy Fish Brose Recipe
Scotland has a long Marine and Maritime History and it is natural that fish would play a large part in the Scottish Diet.
This is a recipe for Fish Brose, which is a traditional mixture of oatmeal, butter and salt and lends its name to this dish.
Ingredients
1 Small Turnip (white preferable)
2 Carrots
1 Medium Onion
1 Leek
2 Sticks celery
2 oz Butter
Salt and pepper to season
1oz medium oatmeal
1 and a half pints of fish or chicken stock or water
2lb white fish fillets
5fl oz single cream
Method
Cut the carrots, turnip and celery into thin strips. Finely slice the onion and the leek.
Melt the butter in a large pan, adding all the vegetables and "sweat" with the lid on, for approx 5 minutes. Stir in the oatmeal and cook for another 3 minutes.
Add the stock and bring back to the boil, stirring continuously. Then reduce the heat and simmer for 10 minutes.
Add the fish, season to taste and cook GENTLY for 15 minutes.Finally stir in the cream and heat through.
This recipe should serve 4 people.
