Empire Biscuit Cookie Recipe
This is a recipe for Empire biscuits or empire cookies as I suppose they would be known in the US. Empire biscuits are easy to make and also widely on sale from most high street bakers.
Ingredients
1 lb. butter
4 cups sifted flour
1 cup sugar
raspberry jam (for filling)
maraschino cherries (for biscuit tops)
2 lbs. confectioners/ castor sugar
8 tbsp. milk
Method:
Pre-heat oven to 350°F. Remove butter from fridge and leave to settle at room temperature. In a large bowl, cream the butter gradually adding the castor sugar and beat this until light and fluffy.
Gradually add flour, mix thoroughly.
This mixture should then be chilled for 25-30 minutes. Roll dough out on a lightly floured surface to 1/4 inch thickness. Cut out into rounds then place in oven and bake for 10 minutes.
Remove from oven and let cool on wire racks. Take one round and cover top with jam, then cover with another round.Mix the icing sugar with enough milk to produce a spreading consistency. Spread on the top of the assembled biscuits.
Top each biscuit with half a cherry.
