Eggplants in tomato sauce

This is a traditional Greek recipe made from eggplant or aubergine as it is known in many parts of the world.

Recipe Ingredients:

  • Eggplants (aubergine) - 1 kg
  • tomatoes peeled and cut in pieces - 4
  • Onions Finely Sliced - 3
  • Garlic Cloves - 3
  • Olive Oil - 150ml
  • Parsley
  • Graviera Cheese


Method:

In a large pan add the chopped egg plants (aubergines) and salt and mix well and keep them aside for 1 hour. Strain the water by squeezing the egg plants. Take a deep pan and add oil to it. Fry the chopped onions along with eggplants. Once the onions are tender add the chopped garlic, finely chopped tomatoes, sugar, parsley to it. Fry for 5-10 min and add water. Let the curry to boil. Cook until the eggplants become soft. And water is absorbed fully. Serve Hot. Garnish with coriander and chopped cheese.
