Traditional Scottish Devilled Kidneys Recipe

This is a recipe for devilled kidneys which are a traditional breakfast dish. However, they can also be eaten at various times during the day as a quick and tasty snack.

Devilled Kidneys

Ingredients:
12 lamb kidneys
flour seasoned with cayenne pepper, mustard powder and some salt & pepper
worcestershire sauce
4 slices of white toast


Method:
Split each kidney in half and remove the white core. Dust the kidney halves in the prepared flour. Heat some oil and butter in a frying pan until VERY hot. Fry the kidneys for about 2-3 minutes on each side until well cooked. Remove these from pan, then place equally on the slices of toast.

Add a dash of sauce to the juices in the pan alogn with a small amount of butter. Stir until butter fully dissolved and sauce is warm through, then pour over the kidneys
