Date and Nut Pudding Recipe
This is a recipe for date and nut pudding. Although not to everyones taste this recipe combines these two ingredients well to make a sweet filling pudding.
Date and Nut Pudding Recipe
Ingredients:
- 75 g (3 oz) margarine
- 75 g (3 oz) soft brown sugar
- 175 g (6 oz) plain flour, sieved with
- 1 x 5 ml spoon (1 tsp) baking powder and
- 1 x 2.5 ml spoon (1/2 tsp) salt and
- 1/2 x 2.5 ml spoon (1/4 tsp) ground ginger and
- 1/2 x 2.5 ml spoon (3/4 tsp) ground cinnamon
- 175 g (6 oz) dates, chopped and soaked in 150 ml (1/4 pint) boiling water, and
- 1 x 5m1 spoon (1 tsp) bicarbonate of soda, and cooled
- 2 eggs, size 3
- 75 g (3 oz) black treacle
- 50 g (2 oz) walnuts, chopped
- Grated rind and chopped flesh of 1 orange
Method:
Place all ingredients together in a mixing bowl and beat with a wooden spoon until well mixed 2-3 minutes. Place mixture in a greased 1.1 litre (2 pint) pudding basin. Cover with double greaseproof paper and foil. Place in steamer and cover. Steam 1&1/2 - 2 hours. Serve hot with double cream or custard.
