Custard Tarts Recipe
This is a recipe for Custard Tarts or custard pies as they are sometimes known. Custard tarts are a real treat in Scottish households. Traditionally only a weekend favourite they are now widely on sale from most high street bakers.
Ingredients
4 egg yolks
1 Tablespoon. sugar
1 pint whole cream
½ Teaspoon. vanilla
a sprinkling of sugar OR cinammon for topping
Method:
Carefully mix the egg yolks and the sugar until thoroughly blended. In a seperate saucepan, heat the cream and vanilla slowly bringing to almost the boil. However, do NOT let it boil as they will seperate and be useless.
Pour this mixture onto the egg yolk-sugar mixture stirring constantly until smooth. Keep stirring until the whole mixture starts to thicken, then pour into ready-made pastry tart shells. Place in the refrigerator to chill, preferably overnight. Some people will then take the following step but a sprinkling of cinammon and serving is equally as traditional OR sprinkle lightly with the extra sugar, then pass very quickly under the grill to turn the sugar topping into a nice golden 'crust.
