Scotch Curried Chicken Soup Recipe
This is a recipe for a hearty soup, filled with just enough spices to give a very warm feeling on a cold Winters morning.
Curried Chicken Soup
Ingredients:
1 oz Butter
1 Stick Celery (diced)
1 Chopped Medium Onion
1/2 teaspoon curry powder
4 oz cooked chicken(leftovers are fine)
1 & 1/2 pints chicken stock
Seasoning (Salt & Pepper)
2 medium carrots (sliced)
1 dessert apple (cored, diced)
1 teaspoon chopped coriander
4 tablespoons cream/plain yoghurt
Method:
Melt the butter in a saucepan and add the onions, carrots and celery. Cover and sweat for approx. 5 minutes. Then add the curry powder, cooked chicken and apple slices. Pour in the stock and cover and simmer for 40 minutes.
Remove from heat and transfer to a food processor when cool enough to handle. Blend until smooth. Return to the pan and reheat then season to taste.
Serve with hot rolls or bread and garnish the soup with the coriander adding a swirl of cream to each bowl.
