Cod in Egg Sauce Recipe
Cod is a popular fish in the U.K. This recipe uses fresh cod combined with a light egg sauce which helps bring out the flavour.
Ingredients for Cod in Egg Sauce
4 medium sized cod fillets
2 oz butter
2 oz flour (plain)
1 & 1/4 pts milk
3 hard boiled eggs (finely diced)
Pinch of Nutmeg
seasoning (salt & pepper)
Method:
Pre heat the oven to 375F. Butter an ovenproof dish and place the cod fillets in it. Melt the butter in a pan then add the flour and stir in over a low heat. Gradually add the milk, stirring/whisking until the mixture is smooth and creamy.
Keep cooking for another 2-3 minutes then add the eggs., the nutmeg and season to taste. At this point you may need to add another small amount (knob) of butter (pre melted is easier as it will mix quicker.)
Stir well then pour over the cod. Place this tray in the oven and bake the cod for 20-25 minutes. Serves 4 along with a potato dish of your choice
