Chocolate Chip and Coconut Blondies Recipe
I suppose at this point I should tell you what a blondie is. Basically it is a soft cake similar to a chocolate brownie. Where did it get the name blondie from - I have no idea - sorry. this recipe uses sweet coconut and chocolate to provide and produce a rich sweet or pudding treat.
Ingredients
- 2 eggs, size 2 or 3
- 225 g (8oz) soft light brown sugar
- 50g (2 oz) margarine, melted
- 1 x 2.5ml spoon (Y2 tsp) vanilla essence
- 50g (2 oz) plain flour
- 1 X 2.5ml (1/2 tsp) baking powder
- 125g (4oz) desiccated coconut
- 50g (2 oz) chocolate chips
Method
Whisk the eggs and sugar together until thick and creamy Beat in the margarine and vanilla essence and fold in the remaining ingredients. Spoon into greased 20cm (8 inch) square cake tin.
Bake in preheated oven 190~C, 375~F, Gas No.5 for 30 minutes. Leave to cool in tin for 10 minutes before cutting into squares.
