Butterscotch Biscuits (Cookie) Recipe This is a recipe for a rich dark biscuit or cookie as it is known in some parts of the world.

Butterscotch Biscuit

Ingredients:
12oz self raising flour
1/2 teaspoon salt
1 beaten egg
8oz brown sugar
1teaspoon vanilla essence
4oz margarine


Method:
Pre heat oven to 350F. Grease a baking sheet. Then, melt the sugar, margarine and vanilla essence together in a saucepan. Heating gently. Once mixed, remove from heat and when mixture has cooled add the beaten egg and mix.

Sift the flour and salt together in a bowl. Make a well in the centre and pour the cooled egg/sugar mixture into the centre. Knead this into stiff dough. It will be fairly dry but do not add any additional liquid. Roll out the dough approx. 1/2 inch thick and cut into biscuit shapes with a cutter (1&1/2 to 3inch)

Place on the baking sheet sufficiently spaced to allow for spreading. Bake for approx. 20 minutes until golden.
