Irish (Ireland)Potatoe Pancake Recipes
Traditional Vegetarian Meals Recipe
This is a very traditional Irish recipe which uses old potatoes to make pancakes. The recipe can also be modified to make the more traditional bread which is often referred to as Boxty.
Ingredients
1lb old potatoes
1/2 oz butter
1/4 pint milk
6oz self raising flour
1 teaspoon baking powder
1 small beaten egg
Salt and Pepper
Method
Cook half the potatoes in boiling water until tender. Grate the remaining potatoes into a bowl. Drain the boiled potatoes and season then mash along with the butter. Mix the grated potatoes with half the milk, then beat into the mashed potatoes.
Sift the flour and baking powder together and combine with the potato mixture to make a soft dough. In a cup mix the egg with the remainder of the milk. Then add this to the potato and this should provide a "dropping consistency" if it doesn't add more milk. Drop spoonfuls of the mixture on to a griddle and cook for 3 to 4 minutes until golden brown. Serve warm with butter.
